Grapes: Chardonnay, Chenin
A full-bodied, slightly toasty fragrance with hazelnuts and apricots, grapefruit and other citrus. A full, juicy taste, refined acidity, extravagant, nicely rounded, complex, rich, buttery, powerful but also mineral. Chardonnay has become one of Limoux’s most successful grape varieties. Nestling in the foothills of the Pyrenees, this corner of the Languedoc is surprisingly cool and the Chardonnay wines made here are exciting and fresh. And that is the basis of this wine, which is cultivated in Saint-Estiennes, a historic vineyard measuring three hectares. These vineyards are farmed biodynamically. The Chardonnay for this wine is blended with small amounts of Chenin and Mauzac, two grape varieties traditionally cultivated in this region. The grapes are fermented in oak barrels at a low temperature and in their own natural yeasts. They then undergo malolactic fermentation in the barrel and aging on the fine lees, with regular batonnage, producing a rich, creamy result. A delicious white Limoux as well as a prime expression of the terroir and grape varieties of this unique region. NB: the label is going to change but the wine will be the same.
